I've used Dia for all of my Entity-Relationship Diagrams.
[EMAIL PROTECTED]:~$ apt-cache search "diagram editor"
dia - Diagram editor
dia-common - Diagram editor (common files)
dia-gnome - Diagram editor (GNOME version)
dia-libs - Diagram editor (library files)
gnome-office - The GNOME Office suite
