I used to use pidgin, when it was called gaim, but I have since started using aMSN. I am uncertain as to whether pidgin has off-line messaging support, but I do know that aMSN does. It is a very feature rich program, and it works well. It is only MSN capable however, so if you need the other protocols that pidgin supports, aMSN won't fit your bill. Kopete is also a nice program (if you use KDE), but is not off-line message capable to my knowledge.
