When doing some video transcoding a while ago, on a Lenny install, I noticed that it was using 100% CPU time with the CPU running at only 1/3rd of its maximum frequency - this was with it set to 'on demand'. Changing the process 'niceness' to less than zero made the CPU crank up to full speed and the video transcoding doubled in speed.
