I'm not sure what this has to do with the alleged difference between packages installed by "Debian desktop" and GNOME. Not that I've bothered to go back to bookworm to analyse the dependencies there as I did for trixie. Is there not—AFAIK you just add pkgsel/include foo,bar,baz to the kernel command line with a list of whichever packages you want (Installation Manual §B.4.11).
