I use the weekly testing netinst every month or so to check it out on a
VM, and be sure my post-installation scripts still work.

Use the expert installation. You will have a lot more questions to
answer, but you will also have greater flexibility. Including setting up
the disk as you like it. And then there's the opaque art of preseeding….
