You should be able to set up per-user and per-domain settings the same way 
that you would if the domains were local.  For gateway domains, you can 
just use the domain name that the E-mail is addressed to.  For example, if 
mail to "[EMAIL PROTECTED]" is sent to the Exchange server, you could use a 
directory \IMail\Declude\example.com\.
