I have a server setup acting as a gateway for a test domain.  Would I
just configure the gateway mail server per the manual to setup the
per-domain configuration?

Yes, you can.

Most of our customers will just run Declude JunkMail on the existing
IMail 
server.  However, you can have another IMail server acting as a gateway 
(search the IMail Knowledge Base for 'gateway' and the first hit should
be 
the one with the instructions on how to set it up).  That server could
be 
running Declude JunkMail, and then forward the mail to your existing
IMail 
server.
