I have a server setup acting as a gateway for a test domain. Would I just configure the gateway mail server per the manual to setup the per-domain configuration?

Yes, you can. Most of our customers will just run Declude JunkMail on the existing IMail server. However, you can have another IMail server acting as a gateway (search the IMail Knowledge Base for 'gateway' and the first hit should be the one with the instructions on how to set it up).
