It DOES list "China" on the Countrychain.

COUNTRY         3       CONTAINS    cn

That's because:

X-Countries: CHINA->UNITED STATES->destination

The E-mail was sent to your mailserver from the United States. The COUNTRY filter type only checks the country that connected to your mailserver. To check all the countries that the E-mail went through, you need to use COUNTRIES:

COUNTRIES 3 CONTAINS cn
