Is this something I can turn off, or will it eventually be removed from this beta/interim?

This is a feature specific to the interim release, that will not be in the next beta or released version. It cannot be removed. The number in the brackets is the number of minutes difference between the current time and the time in the Date: header (as lots of spam is sent with big differences, such as days/weeks/years off).
