I'm running Imail 8.10 with Declude 1.79 and I've had to restart the Imail services a couple of times since the upgrade. Should I be running a different version of declude?
No, 1.79 will work fine with IMail. Declude doesn't require restarting any of the IMail services (except during the initial installation). Any issues with needing to restart IMail services should be completely unrelated to Declude.
