haven't played with this - but I know that people have been complaining about Outlook munging the headers. I wonder if this would help:

 

Additional compatibility can be achieved by enabling Outlook 2003 to save the original MIME source when connecting to a POP3 server. To enable this feature, set the following registry parameter:

HKEY_CURRENT_USER\Software\Microsoft\Office\11.0\Outlook\Options\Mail
Parameter: SaveAllMIMENotJustHeaders
Type: REG_DWORD
Data Value: 0x00000001
