Declude Virus Standard will scan all incoming and outgoing SMTP E-mail.
Declude JunkMail Standard will only scan incoming E-mail.

On a dual P600, I think you should be fine. You will likely notice higher
CPU usage in the Task Manager with that volume, but it shouldn't interfere
with performance.
Declude Virus Pro does include a new "pre-scanning" ability (still in
beta), that will be able to pre-scan HTML E-mail and only send to the virus
scanner the ones that need to be scanned. Normally, about 80%-90% of
E-mail includes HTML (whether or not it is needed), and has to be
scanned. The pre-scanning can cut down on CPU usage.
