Yes, that should work fine (with the MX record(s) pointing to the 'gateway'
server).

You can change the A record for current IMail server to point to the
gateway server. That way, when a user goes to send their mail, it will go
to the gateway server. For example, if you have "smtp.example.com" as the
host to use for sending SMTP (the one that users put in their mail client),
you would switch the A record to point to the gateway server.
