I've an entry for the latest wine-debs in my sources list. Those packages all
have an version like this: Version: 1:0.20030121.034247
Now I've set my preferences file to
Package: *
Pin: version 0.2003*
Pin-Priority: 999
And: It works ! Apt updates my wine-environment daily. Now the "minor" bug
(?).
apt shows me this warning :/
W: Did not understand pin type version
But it should (and it does !) understand the pin type 'version'.
Should, because it's in the apt-howto.

You can't use 'Package: *' and 'Pin: version' together, it's nonsensical.
