I've always thought that some online programming classes would be a cool idea. But I just don't have the time for many pet projects lately.
If you DO manage to get the ball rolling... you should setup a partnership. I worked for a company that is huge in the area of online education and could potentially broker a deal with them to distribute/buy the assets when they're near completion. If that happens the contributors would make some wads of cash.
