If you have further bugs in Delphi 2005 Update 1, you need to go to Quality Central (qc.borland.com I think) and check to see if it is there and if not, put it in. I have been told by R&D that is where they look for bugs to fix.

Now that I've been using it with update 1 for the last couple of weeks I can report that it's much more stable and has stopped using 1GB+ of ram.  Turning off Together helps heaps in terms of general responsiveness - shame if you want to use it.  I've still only stayed with small tools based projects though and havn't tried our main project as Max's problem hits us there too I believe.
 
I've stayed with the 'docked' layout to give it a try.  It would be nice if I could associate a saved desktop layout with editing source and another with form designing the same way I can specify one as the debugging desktop - the F11 toggle doesn't work no more :o(.  I don't want the object inspector or component palette visible when editing source etc...  Where do I go to actually submit this as a enhancement - or check to see of someone already has?
