They are going to move to NZ. The immigration have always been
good about this. There is a new scheme where we have become
accredited employers. What that means is that not only is the visa
guaranteed in 5 days (assuming clean medical and police check)
but PR is also guaranteed in 2 years. Finally, if they leave our
employment, their visa is revoked.
In my case I have been to India twice to do this, the previous time in
2000. Partly because I have family there and it gives me an excuse
to go see them.
I also asked for a personal promise that they will work for at least 3
years. In other countries I could keep their passport or enforce the
employment contract. :-)

When you say offshore? do you mean they are working off shore, or they
