There is no genereal lilypond way. Otherwise I would have done that in the beginning. Lilypond has its own understanding what is a "modern" Breve. Unfortunatly they are very alone with this opinion and the rectangle breve, longa, and maxima are the "real world" noteheads. So you can change the noteheads in general, but there is no general theme that triggers the wanted behaviour.
