Translated into Chandler's language, Mail's "SSL" option means "use
SSL or TLS, and the app will figure out which".
I don't mind having the two options, it's just that most people
will enter account info by copying it from whatever existing email
client they have set up...and the only reason I decided to try TLS
was because I remembered that when Grant helped me set up my email
a few weeks ago (to test stamping), one of the accounts had TLS.

I think what we have is sufficiently plausible for 0.7. The "SSL"
vs "TLS" thing is one of my pet peeves, but it's not really a big
deal (just me being overly picky :).
A while back there had been a thought that we automate as much of
the setup as possible, but that won't happen for a while.
