Ian,

You should be able to go to the Launch button, choose Preferences,
choose Desktop preferences, and then Display, then Fonts. This
will open the gnome-font-properties window (which you can get to
by typing 'gnome-font-properties' at the command line). Use this
tool to select you fonts.
