I should mention connecting with same accounts/domain via smbclient works as expected.

When I try to connect to a Windows Server with Active Directory on it I enter my information in the respective fields like so: Username: user Domain: foo Password: **** but it will then fail to authenticate and reprompt for the password. When enter the same information like so: Username: foo\user Domain: <any random information> Password: **** I am able to authenticate with no problem. This leads me to believe that gvfs is not using the Domain field to send the domain to the server.
