A possible and only temporary solution is to navigate to
/usr/share/icons/Humanity/status and move away (or delete) the
"audio-volume-<level>.svg" and .png files, where <level> will be one of
high,medium,low,mute.
This way the monochrome icons of gnome default theme will be in use.
The downside is that this operation should be repeated at any update of the
humanity icon theme package, since those low-resolution files will be installed
again

I am using the Ambiance theme and gnome-shell. When using the keyboard
volume buttons the on-screen-display shown an icon which has been
nastily stretched, so it appears very blurry.
