I can confirm this bug. Suddenly today the icons are uggly grey. 
In addon manager the default theme was off. But reanabling does not change it 
back to colour theme it was before. Still monochrome icons.

Bug description:
  thunderbird (1:45.2.0+build1-0ubuntu0.16.04.1) again (bug #1004841)
  overrides the default theme with ugly monochrome icons. Instead of
  adding a theme and using it by default, there are three patches that
  override the default linux theme:

  theme-refresh-addressbook-toolbar-icons.patch
  theme-refresh-compose-toolbar-icons.patch
  theme-refresh-messenger-toolbar-icons.patch
