Marking as Invalid per upstream's comment:

Ignacio Casal Quinteiro (nacho) [gedit developer] 2009-12-01 12:08:09 UTC
This is now remembered per document. We think this is the best way to manage
this option so I'm closing this as WONTFIX.

Title:
  Remember autocheck spelling setting

Status in Light-Weight Text Editor for Gnome:
  Won't Fix
Status in “gedit” package in Ubuntu:
  Invalid

Bug description:
  Binary package hint: gedit

I use gedit all the time for all sorts of tasks. It's a very useful tool.
Personally I would find it very useful if Gedit would remember it's autocheck
spelling setting.
A bug has been reported about gedit remembering the setting per file. I am
reporting this because I would like it to remember the setting globally and not
per file.
