One of the things that needs to be a lot clearer up front in the documentation
is what options are available when you want a Firefox OS environment, and which
to choose: the Simulator, the Emulator, or a Device. That advice should be in
page linked as the first item under the Build & Install section on:

in my opinion.
I've created a very incomplete first pass at such a page (but not yet linked it)
