New option for that is a good idea.
But - having two options (one for entire shop and other for particular categories) - I think would make big confusion.

If implementing one of two options - question is - which one:
1. Option for particular categories, would be more logical, more custom, but can cause some performance loss. 2. General option for all categories - would give possibility to affect also assignment of other objects, like Discounts, Coupons, etc. I mean - if selected - assignment of all objects would be valid for subcategories.

Which one of these options you would prefer?

I agree with that. The feature should be implemented but should be optional. Best way would be to have some global options which affect ALL categories and in addition to that the possibility to do it only on the level of single categories.

Hi,
maybe you could invent an option "inherit to subcategories" that controls this behaviour.
We are not using sub-categories so we are not facing  this issue....
