I checked PyArrow's download stats for macOS Intel at
https://sql.clickhouse.com/ with the following query:

FROM pypi.pypi

macOS x86_64 wheels account for only about 0.1% of all
PyArrow downloads in the last 30 days (332,854 out of
335,300,029), so I think we can drop it.
