Hi Mike,

Are you using Ubuntu 10.04 installer? If so, you need to use the network 
installer (See XenServer guest.pdf documentation). Alternatively, set the OS 
type to "other" to use HVM mode.

I believe 12.04 has the PV drivers so you will be able to use the default ISO 
to boot.

The way I do it is to:

1) Import Ubuntu network installer ISO into XenServer directly
2) Create VM and install Ubuntu via network installer
3) Create template from VM
4) Export template
5) Import template into CloudStack
6) Create new instances from the template
