Nevermind, looking at the other projects they don't have extra files for the
binaries but just put everything in one NOTICE resp. LICENSE file...
Any tools to help with this process or check that all licenses are covered?

For the binary release, you will need to have a more descriptive
license that incorporates all dependencies being shipped with the
distribution.
Here is a good example:
