a good site to start is the Chart2 wiki page:
http://wiki.services.openoffice.org/wiki/Chart2, where you will find
many links to various Chart examples.

You can also look at competitive software: one of the best for
statistical purposes is R (hhtp://cran.R-project.org). Though it is not
as easy to use, it offers powerful charting capabilities. A large
collection of charts created in R can be found at
http://addictedtor.free.fr/graphiques/allgraph.php.

Various other improvements are described in
http://graphics.openoffice.org/files/documents/12/3278/List_of_whished_enhancements_for_Charts.odt.
If you have any questions regarding statistics, feel free to ask.
Unfortunately, I cannot guide you through the coding process itself, but
I may be able to answer some theoretical questions.
