What does "custom paper formats" mean?

A format not directly supported by the printer. Most printers typically support Letter or A4 format (among many others) but they also allow you to specify an arbitrary width and height that does not match any of the builtin formats. Hence, a custom format.
The list of builtin formats appears in the print dialog when you go to the advanced settings under Paper/Quality.
