Sorry, I'm down here in Brazil, not many resources here too, sorry :)
There is a nice CF blog run by some friends (* *www.cfgigolo.com , it means
"cfpimp" ) which is well written and very updated, but it's in portuguese.

I've done a lot of CF tuning for the Brazilian government and some MM
clients here, and I had the same problem as everyone, I guess... had to dig
deep in order to understand what was happening. Turns out that in the
process I really got an understanding on how to tune my JVMs (with some help
from MM engineers) that now run very smooth.

Correios (www.correios.com.br) which is my most important client, gets more
than 30 million page views monthly, with an average of less than
60ms/request.
Their intranet, where we can't use much cache, also has at least 15,000
users on a daily bases, and I was able to get the request execution average
to something between 150/250ms.

The process I found uses both, server tuning and code tuning, in order to
identify bottlenecks, correct them, test, deploy and then follow-up for some
time in order to record the performance gain. The problem is that there is
more than 300 different apps, hundreds of thousands of lines of code, much
of it dating from CF 4.0, you have no idea how much bad code I had to
re-write in order to get this performance.
I could write a book on how to NOT code CF just from what I found there :o)

Yes sorry forgot to update the list to include Grant's book (I have a copy
of it as well)
But you are right there aren't many resources out there...not sure where
you
are based but there may be some courses available on the other side of the
pond?
