The main difference between the scopes, other than what Adrian said, is for
replication.
Because session vars are stored in memory, session replication can be a
problem in a cluster.
If your client vars are stored in cookie or database then this is not an
issue because they are not machine specific.

Application vars are application wide.

As Adrian said, client vars cannot store complex data, so if you want to
store queries, cfc'c (not recommended), array's or the likes then you will
need to serialize them (into WDDX for example) first.

Thanks for the reply Adrian...

We're running on Windows but how can the Client vars be on the users
machine? I can't see how the browser can write any kind of variable (except
a cookie) to the users machine.

What's the difference between Session and Client Scope? Is there an
Application Scope as well?

Thanks,
Nick
