It may be that it takes a while for the page request to get handled by the Network/ColdFusion server/web server and the time taken to process the 2 includes is small in comparison to the time taken for the whole process.
Also, most browsers won't render a partial table, so if your 'processing...' is in a table which is closed after the includes, it won't get displayed until all the code for the table has been sent to the browser.
