Hurray.... Finally got it!!!

In the folder where Flash MX is installed is a player folder, under which is
a debug folder.  In there is an installer for a player which allows
debugging.  You need to uninstall your current player, otherwise the debug
player won't install. (That had me stuck for a while....  Told me it had
installed but hadn't really!)

Once you've done that, published your movie with debug permitted and enabled
remote debugging in Flash MX Debugger, it works a treat!

Now all I've got to do is work out why my XML loads when I hand code the
link, but doesn't if I give it a URL dynamically!
