My laptop isn't really up to server spec, so I just run 2K pro, so if you don't need the sites running concurrently, just change the home directory in IIS every time you want to change to a different site

You don't have a machine with Server on it, just Professional. Either you spend �xxx on upgrading (if you do things legally of course), or you could use the free HTTP Server called Apache... hmmm!
