One comment, if you'd like install quite a lot stuff on liveusb, you can make it by creating image with --overlay-size-mb set to a big value such as 256

Are you asking how software (in general) is installed (i.e. using yum to install rpms from a yum repository), or just how to persist changes made on a live image? I'm guessing the second...
