can you do a "su -" inside teh chroot to clean the environment

I'm not sure I follow. When in the jail, doing the above will simply
log me in as root surely ?
When logging into the chroot'd env, I do so as such
sudo /usr/sbin/chroot ~/jails/moblin/ su - glen
