I don't know for Italian, but like Bruno, in French, I prefer to use the
standard way of writing: only the 1st word capitalised. UI are for users, they
don't know anything about fields, entities, etc. It's just text for them, like
in a newspaper... I suppose this habit comes from a leasy way of transposing
CamelCase words used in code and such. I can't see any plus in it, but a
dangerous way of perverting old rules. Like you see, but worse, also in SMS. In
one word : decline (ok I'm a bit old fashioned when it comes to speak about
language, no surprise : I'm French ;o). Sometimes, it makes sense though (IBM
Marketing services generalised this way of writing) : when you need to
introduce a new concept which has no meaning outside of your jargon (like in
Java Enterprise Edition for instance).
This is only my opinion :o)
