Hi, I have made a crude trial with Mapserver WFS, and it is possible to query hstore column with multiple keys/values. It is not possible with Geoserver WFS because Geoserver does not support hstore datatype. If someone happens to be interested I can try to find the configuration I used. In the same way it is possible to create dynamic WMS layers from any key/value combinations that exist with Mapserver, and users can send them simply with GetMap request with two extra parameters like &key=xxx&value=yyy.
