Ok, and where can I get the Carto style sheet that is now the basis of
the OSM map? Or do I just re-fetch the Mapnik XML because it has been
updated with the output from carto?

The Carto bit affects the writing of the style, not the using of the
style; you take the style written in Carto, run it through carto (the
program) once, and you get a Mapnik XML just like before.
