I'm not sure that this is a binary compatibility issue. The missing builder method was recently added in 1.11.0 with the introduction of the new logical type API, while the original version (one with a single OriginalType input parameter called before by AvroSchemaConverter) of this method is kept untouched. It seems to me that the Parquet version on Spark executor mismatch: parquet-avro is on 1.11.0, but parquet-column is still on an older version.
