I think I'd prefer to focus on releasing 1.2.0 from main.

I am proposing that we make a release from the 1.1.1 branch. Main is
currently sitting at 1.2.0 because a lot of new features were merged
into it (which requires a minor version bump) but there are still more
features to be merged for 1.2.0 i.e.
https://github.com/apache/pekko-connectors/pull/1021 but there is more
to come.

On the other hand, all of the bug fixes that have accumulated for the
1.1.x series haven't been released yet, hence the release for 1.1.1.
There are people out there currently using 1.1.1 snapshots with bug
fixes for a long amount of time because 1.1.1 hasn't been released
yet.
