I believe Eric might have confused you slightly. Although I build OOo 1.1.x mostly on Jaguar, all you care about is that the $ANT_HOME variable is set correctly by configure (--with-ant-home=/path/to/ant). In my case I have Ant in /usr/local/ant. The $JAVA_HOME is hardcoded for Mac OS X - you can just ignore it, as configuring it (--with-jdk-home=xxx) won't change anything.
No : sometimes, configure fails if --with-jdk-home=xxx is missing
That's the reason why I prefer use it.
