Hi Alexandro,
if these crashes still occurs in OOo 3.0 final, then a reproducible
scenario and an issue is needed. These crashes are critical and
have to be fixed for OOo 3.0.1.
If the crashes were reported for RC3 and earlier, than perhaps the
issues are fixed :

(Windows) : http://qa.openoffice.org/issues/show_bug.cgi?id=94226
If the crashes still exists, the online-update will not help here.
Because OOo 2.x and OOo 3.0 have different user directories. This
is needed that OOo 2.x and OOo 3.x can be live side by side on one
PC.

The issues when doing this is that OOo crash when it intends to
migrate user data from 2 to 3. Several users had to delete the user
data in order to avoid the crashes.

Problem is that crashes happens when OOo do that automagically.
