The UUID field appears to be unused, so the "enhance" goal will not support it.

The copyright field can be set in the configuration section of the plugin, but
there appears to be no sensible way to obtain a default. The Maven licenses
element appears to be too complex and doesn't contain any explicit copyright
section.
