Hola Alexandro,
I am not sure I understand your task. If you want to add your wiki page
to the category Xyz, you have to add "[[Category:Xyz]]" to your page.
This adds a link to the category at the bottom of your page.
The category page is a special wiki page. It is basically an
auto-generated page with links to all pages that contain the link
[[Category:Name of that specific category]].
But you can also edit the category page and enter stuff before the list.
Moving and renaming of wiki pages is not possible (AFAIK). If I want to
really move something I copy the WikiText to a new wiki page and place a
redirect statement on the old page. Example:
http://wiki.services.openoffice.org/wiki/Alpha_Centauri?action=edit
This has the effect that all calls to
http://wiki.services.openoffice.org/wiki/Alpha_Centauri
result in
http://wiki.services.openoffice.org/wiki/Category:Alpha_Centauri
hope this helps

Is there a way to 'move' a page into a category or should I duplicate
the pages within the categories.
ie.
http://wiki.services.openoffice.org/wiki/<project> to
http://wiki.services.openoffice.org/wiki/Category:<project>

Do we have wiki guidelines?
no, not yet
Do we need them?
a lot of people think so. Frank Peters ahs this already addressed and
has planned something...
At least I have just started a page for that purpose:
http://wiki.services.openoffice.org/wiki/Wiki_Guidelines
important is that we align all efforts and clean up the existing stuff
(if possible) according the new guideline.

cheers
