The name sent in the email address is configurable. There are separate place holders for username, userstore and tenant domain. You can use one or more of the above.
However when logging in it is expected to behave like carbon admin console. I.e. tenant domain is mandatory and user store domain is optional. If you don't give user store it will go in a chain and authenticate. If you haven't enabled EnableEmailUserName in carbon.xml you must provide tenant domain even for super tenant that is the expected behaviour. So questions is why you cannot login to without giving userstore domain?
