If you are only interested on the amount of traffic, you can adapt the "fmlmeter" core that is used to retrieve statistics (bandwidth, occupation, mean latency) on the FML (SDRAM) bus: https://github.com/milkymist/milkymist/tree/master/cores/fmlmeter (see also the chapter about memory bandwidth and this meter core in http://www.milkymist.org/thesis/thesis.pdf if you haven't done so already) With some rather simple modifications you should be able to connect such a meter core to each of the bus masters (FML or WISHBONE) and get statistics about the data transferred by each master. This will work on the live system running in an actual FPGA, if you are only interested in simulation you can also develop similar bus probing techniques e.g. with VPI/PLI or simply $display and parsing the output. If you want to dump the actual data, this is more complicated since you need to get it out of the FPGA, and it amounts to several Gbps.
