I don't know of a generic way.  OpenVortex people did this:

Obviously the process of finding the proper symbols and using them to
intercept hardware access will need custom work.  This will only let you
trap hardware access as far as you can determine where the code is doing
it, i.e. you can't setup a fault to drop you into your own code afaik.
